The chardonnay grape is one of the most acclaimed in the world and, when combined with barrels, one of those magical ingredients in winemaking. The result is amazing.
Cannonball Chardonnay 2018 begins his life in the vineyards located in the Northern area of California. Vineyards characterized by their cold climate and a great beautiful mineral component on the fruit.
Using the barrel fermentation technique, Cannonball Chardonnay is a completely balanced wine. The oak barrel selection complements the wine without dominating it. Ondine Chattan loves the texture and components that oak bright to the wine. 24% of those French barrels are new. Barrels with very specific characteristics, medium toast on the bilge and no head is toast.
French oak produces a slow, soft, sweet, and elegant extraction in aromas and flavor.
The color is a luminous, lightly golden straw derived both from the grapes themselves and the toffee toast of the oak in which the wine was fermented. Aromas of nuanced oak, baked sourdough pie crust, toasted bread, caramel, and peeled Granny Smith apples emerge from the glass and lead to the palate as it enters full-bodied and toasty with notes of roasted almond and lemongrass tea. Luscious honeycomb and sweet butter creaminess deliver a satin-like presence that is moderated by a fresh mineral acidity on the finish.
We recommend drinking this wine at 52º- 53ºF. (10º-12º C)
